Cut chicken thighs into pieces
Add the right amount of cooking wine and mix well; then add the right amount of salt and mix well; then add the right amount of starch and mix well.
Mix the soup. 2 tablespoons sugar, 2 tablespoons vinegar, 1 tablespoon cooking wine, 1/3 tablespoon soy sauce, 1 teaspoon starch, 1/3 teaspoon salt. Mix well, soak the scallion, ginger and garlic in the soup to taste.
Hot pan cold oil, stir-fry chicken. Until the chicken is fried and turned white, the chicken is served.
Heat the hot oil in the pan, add peppercorns, and dry the peppers to scent. When the chili becomes reddish red, remove the scallion, ginger and garlic from the broth and sauté in the pan to stir out the aroma. Add chicken and stir fry.
Mix the soup and pour it down the side of the pot. Gently shake (do not fry in a hurry), wait for the color to become slightly transparent and shiny before frying.
Drizzle with chili oil. Finally put peanuts. Turn off the fire.
