Finely chop ginger, garlic and shallots. Then mince the meat and mix with ginger, garlic and green onion and mix well. Add wine and salt to marinate.
Cut the eggplant into sections and draw a tic-tac-toe pattern in the middle. Place in a frying pan and fry until golden. Some starch can be added. After frying, start cooking.
Add the marinated minced meat to the pan and fry. (Add a little soy sauce, vinegar, and sugar halfway.) Add the chopped green pepper in the last few minutes.
