Cow Swiss Roll

After a rest for more than half a month, I saw the round pig roll cake yesterday and finally itchy my hands! Do it now! Thank you for the recipes provided by Yuanzhuzhu. In addition to the personal oven problem, the temperature is slightly higher, which is considered a success! Maybe the granulated sugar used to make the cake batter is 30 grams less than the previous recipe, plus I do n’t have cream cheese, so I used salad dressing as the filling, the cake roll will taste slightly lighter, and the salad dressing tastes a little weird, It will be better to prepare the materials next time and do it again, hahahaha ~

Material

protein 4 pcs
Fine sugar 20 grams
yolk 4 pcs
Fresh milk 15 grams
Salad oil 40 grams
Low-gluten flour 70g
corn starch 15 grams
Sugar-free cocoa powder 1 tsp
Hot water 1 tsp
Cream cheese 130g
granulated sugar 13g

Pack egg white and egg yolk in two clean and oil-free basins;

Add fresh milk, salad oil and fine granulated sugar to the egg yolk pot and mix well;

Sift in the flour with a flour sieve, and use a manual egg beater to mix the batter evenly, which is the egg yolk paste;

Put cocoa powder in a small bowl, put two tablespoons of egg yolk paste, 1 teaspoon of hot water, mix the cocoa powder and set aside;

Pour the fine sugar into the egg whites three times, and use an electric eggbeater to beat at a medium speed to 9 to distribute;

Take 2 tablespoons of protein paste in cocoa batter and mix thoroughly;

Spread baking paper in the baking tray, use a spoon to draw the cocoa batter on the paper, showing irregular large spots, and put it in a 170 degree preheated oven in the oven for 1 minute until the skin is slightly condensed;

Take 1/3 of the protein paste into the egg yolk paste and mix well with a rubber spatula;

Then pour the mixed cake batter into the remaining 2/3 of the protein paste and mix from bottom to top;

Pour the mixed cake batter on the baking tray where the cocoa paste is baked;

Shake the baking tray a few times, shake off the large bubbles, preheat the oven at 150 degrees, and bake in the middle layer for 30 minutes. Turn it over and roast for 1-2 minutes until the surface is golden yellow;

Do not take out the baked cake immediately, cover the surface with baking paper and wait for 10 minutes before taking it out;

Carefully tear the oil paper on the back, moving slowly and lightly, otherwise the cocoa mass will easily fall off;
