Cut the beef into pieces, rinse with water and soak for more than half an hour, and change the water several times.
Add a few slices of ginger and a little cooking wine in cold water, add beef and cook until water boils. Wash off the foam with hot water and wash the beef.
In a separate pot, put the onion segments, ginger slices, star anise, peppercorns, and dried chili peppers in the hot oil and stir-fry. Add beef and boiled water.
Simmer over low heat for more than two hours, taking care not to boil the water to dryness. If there is not enough water, add boiling water.
Add salt when the beef is almost out of the pan. And sit in a pot of water to start cooking noodles.
Grab the noodles in a bowl, fill in the beef, sprinkle with chopped green onions, and finally pour the beef soup, and you're done ~
